I've got the right front axle out of our '85 Golf .
The tire is still on and I found a lot of slop in what seems to be the front wheel bearing, or does it all tighten up when the axle is back on and torqued up?
I didn't notice any slop when it was all back together and I was pulling the studded tires off and installing the summer tires.

it should tighten up as the nut is tightened. That's why a car without the axles installed won't roll. The bearing is supported by the axle shaft causing the bearings to line up in their races.

When new, the bearings should have no slop. But with 40k+ on them, expect some in and out. Nothing to worry about as Caveman notes. If you hear noises, that's your first sign.
Don't roll the car around with no axles. You will ruin the bearings, sometimes within 10 feet.
I'm going to keep the old outer CV to install in case I need to move a Golf with the engine and transaxle removed
