Right, I have a motor from a 1.6td Passat in my Caddy and the pump looks to be knackered, this engine is/was already intercooled, I just picked up a Golf with a TD motor but this engine has no intercooler and the pump is different, it looks like a part on the top is missing at a glance Passat is 89' Golf is 91'. What I need to know is can I intercool this new engine and are there any differences in the pumps both are 1.6

The one from the Golf is probably from an ecodiesel engine.  The eco's had the turbo, but didn't have the LDA (boost / fuel compensation device) on the pump.   Essentially, the boost made emissions better, but didn't increase power much since the fueling wasn't increased at the same time.

You can intercool any turbo engine that you want... that shouldn't make a difference, but to take advantage of the increased power possible from a TD, you should try to keep the LDA (the thing that looks like a flying saucer on top of the pump).  From what I've heard, you can switch that part onto an eco pump, but I'm not sure how... I've never done it.

just a thought but would it be alot slower not fitting this?

I think it makes a 10hp differane in stock form. Once you start upgrading though you'll defintly want the LDA. There was recently a post somewhere one here explaing how to put the LDA on a non-LDA pump.

You might be better off just getting a true TD IP and selling the ECO pump
