The exhaust outlet side of the K03 turbo is a different shape (rectangular) than the other turbos VW used.. K14, T2, T3, which have a square outlet.
Based on the pictures that I saw the AAZ TT downpipe is expecting the K14 turbo with its square outlet. Certainly worth confirming before you order.
This thread starts with a picture of the K03 rectangular outlet:

Whereas about 2/3 of the way down this thread you'll see a side view of the K14 square outlet:

ah, okay. Damn.
That flange reminds me of the ones on Subaru turbos.
Is it as simple as grabbing up a different turbo? or are the intake manifold and exhaust manifold diff as well?

Intake's the same, but the K14 uses a different exhaust manifold (same one as the T2/T3/K24) and probably different oil lines as well...perhaps someone else will chime in.
Unfortunately you really did get the odd ball turbo.

Maybe I will work with it until it craps out on me or something. It does have the down pipe with it.

Sounds like a plan... lotta work to shift to a different turbo, and you should be able to find a muffler shop that can work with your existing downpipe?

If the stock down pipe will fit in the rabbit (mk1) then the rest of the exhaust could be attached to it no problem.

Correct, just a rear muffler is needed
To change to a different turbo:
intake manifold will change
intake snorkel is different 1.85 KO3 , K14 is 2.33 I.d.
( I make both snorkel's and Turbo Duct's )
turbo to intake manifold duct is different
Downpipe is different
Good Luck
