Adjusting Valves? New Valves...New Head

Hello;
I am installing new valves into a new head and was wondering how you adjust the valves. I thought I remembered reading somewhere that you grind the top of the valves. If so what is the installed height? Step by step would be nice, but any information that would help me finish this part of the project would be greatly appreciated.

Shims in the lifter buckets. I am not quite there yet, so i dont know the specs.

td04 turbo, Zex nitrous (for the big hills), PITA motor, fresh rings w/ ceramic pistons.
Custom Intake and Exhaust
Ported and polished head
Dipricol EGT, FP, Boost,
Autometer, Oil Temp, Water Pressure

The shims are only for Mechanical heads? That eco is hydro isnt it?
I though the hydraulic heads didnt have an adjustment. I dont own one and have never worked on one so I dont know.

See page 28 of the Bentley manual
In the ENGINE Section.
The installeded height of the valve stem
is calculated relative to the gasket
surface (valve cover) of the cylinder
head and the valve seats.
Maximum: 1.5mm
Minimum: 0.5mm
At least, I think I've got that right.
I hope that's what you're looking for.
If it's a "new" cylinder head and "new"
valves the valve stem height should
likely be within those specs.
