I did the search but it didn't turn up any previous topics on this. Are there any threads or how-to DIY guides to replacing the fuel filter and the water separator?
What brand of filters... Mann, Bosch... Meyle? I will also have to replace O-Rings? Seals?
Is there a better guide online than this one?

MK2s are a bit different then that one linked.
The best maintenance for the water seperater (by the passanger rear axle) is to delete it. It's useless and only the mk2s have them.
As far as the actual fuel filter in the engine bay it is the exact same as an oil filter. Unscrew it, fill it with ATF or diesel fuel, screw it on and go.

If the fuel filter has a water separator then the undercar separator can be deleted. I never did because it's not a totally useless and doesn't bother me.
MK2 filter don't unscrew. At least the two MK2 diesels I had didn't. There was a clamp holding the filter on with two or four hoses going to it depending on the year of the car.

Look at all the crap that came out of mine... I'd say that makes it pretty useless and makes the pump work alot harder then need be.
