I'm wanting to put an aaz metal HG onto my 11mm 1.6 mechanical lifter engine. Exactly which holes need to be plugged?

Get an extra oil fill cap gasket when you get the metal head gasket. The VW AAZ metal head gasket has a hole for the extra front oil drain that all hydo lifter heads have.
Your head and block don't have this extra drain. So you really don't plug anything. You just fill part of the extra oil drain hole in the metal head gasket.
cut a piece from the brand new oil cap gasket to fit the hole in the metal head gasket where the extra front oil drain lines up with a coolant passage in you mechanical head and block.
You have extra difficulty points for trying to keep the 12mm holes in the gasket centered on your 11mm studs (I hope you have studs).
I don't know if the 11mm 1.6 blocks have the same problems with cracking the block due to the woefully short engagement length of the stock head bolts. But it’s a biggy on the 1.5 engines.
If you already have studs, and a fiber gasket, you may want to waite till it blows of its own accord if it ever does. I ran boucoup boost and fuel through my 1.6TD in my '79 with a fiber head gasket and studs. Never had a problem.
