'94 1.9 idi, no air, manual trans.
I need the appropriate head gasket .  My parts guy says he has listings for three of them which one do I need?   the options are 1 hole, 2 hole or 3 hole.  The # of holes corelates the the thickness of the hg.  
Any quick help is greatly appreciated.

The holes denote the thickness of the gasket material. The easiest way to see what size you need is to look at the front of the motor ( the front being the front of the car) where the head and the block meet. Part of the head gasket sticks out here, you will see 1,2, or 3 holes (not notches) this will tell you what you need.

I was always under the impression that you had to remove the head to check which HG is required. Maybe it's differant with the 1.9s?

You have to remove the head to get a 100% sure answer. If the gasket that was on it was right, you could just pick up another of the like. But the only way to tell for certain is to pull the head, and measure the piston protrusion above TDC.
