What kind of filter is on there? Some VWs are sensitive to this, if it's not Mann or Mahle the oil warning system acts up.
I have had this wierd issue on my 85 jetta and did all sorts of stuff to try and help because the low pressure alarm would go off. This persisted after putting another engine in as well. Taking a manual reading from the head I would go over 100 on cold start and pressure is always in spec(except in some high speed sweeping turns?).If the tach is working then I assume the alt belt isn't slipping so I don't think that is an issue. My cluster seems to work for everything else but at the end of the day I am assuming that has something to do with it. I have tried replacing the sensor a couple times. Also seems like sometimes its ok and then during other sessions it gets real pissed off.This kind of thing scares me on these old cars so now I have 3 auber electric gages. water temp, oil pressure and egt/boost. you can set warning levels and i have some aircraft buzzer that they will trigger if those are met. annoying noise that would freak out first time user. But I have had family borrow this car and blow up engine after seeing flashing temp gage so it is what it is

Stay safe, stay well. Jimmy. these engines are VERY picky about having the correct oil filter..FRAM should NEVER come NEAR your VW..

I would definately bank on the filter, but just in case it wouldn't hurt to throw a gauge on it and see what it is actually doing.
<-----big enough dick to ask.... you positive you did not UNPLUG a sensor on oil filter housing??? that will do it... also 82-~current have dynamic oil pressure.. 1 bad sensor amd light/sound right now... make sure they plugged in..
I used to be on the fram hating boat, but have you opened one up recently? They upped their game significantly. They do not use a rubber diaphragm for the by-pass anymore.. its a metal spring loaded type, just like Mann and other reputable German filters. If the filter were the problem, this engine would have been toast by now with no oil pressure.
