oil pressure drops in sharp turns?

I got my jetta used a year and a half ago and it had borderline oil pressure and blowby. We have driven the hell out of it and yesterday it just came to me that on windy roads when turning the oil pressure seems to drop to about 10 psi.
Originally with the stock sensors in place the high end buzzer would go nuts, but not on the freeway and flat ground. Then I had a manual gage in there for a while but recently yanked it due to an in cab oil leak in our truck freaking me out and not wanting to route oil inside ever again. So now I have an electric gage and it is showing the same thing.
After I got the car I cleaned the oil pump screen and replaced the major seals and outer intermediate bearing as well as the vacuum pump seals. I don't have external leaks and all this happens with the oil topped off.
Just curious if this is normal or not for the 1.6 td? I wonder if the windage tray would stop this or if the car is getting hurt during those drops?
I'm going to rebuild the engine soon since its burning a quart of oil a week, but I would like to know the answer for the future, thanks!

It had a baffle from the factory and maybe that is not attached anymore. It sounds like the oil is sloshing around and not getting picked up from the tube.

Oops I should have said that I do have the stock plastic piece that clips onto the pump.

I think it's fairly common, though not desirable.
If your oil pressure isn't good, but the engine is in pretty good condition, consider the 36 mm pump.
I've heard (but haven't tried it myself) that the oil baffle (that clips onto the pump) for a 2.0l gas engine fits our cars and has a better design that works better under heavy cornering.

Might the windage tray/integrated rubber oilpan gasket help with this?

Moroso makes a pan for the 1.8/2.0 that has "doors" to keep oil near the pickup.

Are you only getting the warning when your oil level drops or even after you've topped it up?

It happens with a fresh oil change. It freaked me out when I first got the car and drove over the windy up/down mountain. I couldn't stand that high end buzzer so I disconnected it and went the manual gage route, etc. Doesn't happen during normal freeway driving. The low end light has never went off and I guess the manual gages confirm that number.
When I rebuild I totally want to do whatever I can to help prevent this over the stock setup and so that I don't have to drop the pan again for a long while
