It is my understanding that the aaz gasket is metal. Are you talking about something like a copper sheet type gasket?

Stock HG will hold some pretty high boost. Perhaps you should look at some head studs to provide greater clamping force.

so if one was to get headstuds and was running a turbo on a non turbo engine (solid lifter) and used the stock head gasket then what kinda boost would they be able to turn it up to?
is there any metal headgaskets that are for non-hydro engines

I know that head studs are all the rage, but personally, I'd go with the head bolts from the PD150 (ARL) engine. They're grade 12.9 vs. 10.9 of the regular head bolts. Yes, at about $80 per set they are more expensive than regular bolts (about $25 per set), but I've never heard of anybody having sealing problems with them. You would also have to go through two sets of them before they became more expensive than the reusable head studs (about $175 per set). Besides, how many times to you really plan to remove the head? If you look on TDI club, those guys have had a lot of problems keeping a good seal with the ARP studs. In my opinion, the bolts are stronger because they're only one piece.

no metal HG is a direct fit for non hydro engines.. the aaz is a direct fit for hydro.
but, people here have done the metal one on mechanical engine with some success, but not without mods, you gotta block holes in the head gasket and so on and so forth.
this is the exact situation you will face
basically, a coolant passage is the problem, tig weld it up, and get some damn good silicone sealant to fill the hole in gasket.
