Is there some sort of fix for the door handles on a Mk2? or Mk1, for that matter. Everyone seems to accept the fact that the doors are difficult to open from the outside. Can you bend the linkage or something?

Moving the striker pin a bit usually makes a big difference. Spray some WD40 into the lever to loosen it up as well.
i've broken one once from extreme cold (20 year old car)... it was so brittle  needless to say i spray in some rust check every year or so... it makes the difference
I put some heatshrink tubing on the finger that presses the lock mechanism tongue, I can now open it with one finger pull
and liberally lube up the handle crank mechanism with ATF
I've found that if the handle is sticking shut you can loosen the screw in the side of the door a bit and that usually helps
Replace them with mk3 style handles and keep them lubed up as mentioned above.
Thank you for the advice.

Make certain you lube the locking/latching mechanism, the grit in latch causes the extra stress to be placed on the door handle mechanism.
