It's a bit more pronounced, but that burbling and loping is pretty much how all the Detroits in the area sound when they're idling. DD engines are noisy, but big on power and pretty efficient for their size.
The ones we run range from a DD 12V2000 760hp to a DD 16V4000 2700hp. They are noisier than the Cummins engines, especially on a cold start.

Properly adjusting the governor buffer screw will get rid of most of that "galloping". They should settle in to a nice stable idle pretty quickly after a cold start. The telltale sign of a yahoo detroit owner is that rediculous galloping idle.
I think once you are double factory fueling or so, most pumps get a bit goofy at idle.
My dad has a Allis Chalmers dozer (50's era) with a 2 cylinder detroit diesel, I think. It's LOUD -- can hear it from a mile or two in the mountains easily.... Seems like a good strong engine though. And if it had a muffler, it might help too....
