I am putting together a AAZ from a long block and I could use your guidance. At this point I am looking at my instruments and the first ones I would like to set up are the oil pressure ones. I would like to hear your advice on where I should set up my sending units and where to buy the said units. What I have in mind is to keep the (low pressure ?) unit which I think is on the filter cap and add a low/high pressure one somewhere else. What should I do?

If you're planning on using a VDO 2 1/16 round gauges, why not just put it where the stock ones go on a Cabriolet. So, you'd use the stock pressure gauge on the oil pickup flange, and the VDO sending unit on the side of the head for the idiot light and the wire for the gauge.
Its really easy to do. I put some Cabriolet gauges on my 1984 Rabbit 1.6D, and the block/head is the same.
If you need a sending unit, I think I have about a half a dozen laying around here. They're the 1-5 bar type.
You can find used gauge sets on ebay all the time (I sell them there), or buy spiffy new ones at Summit Racing. The gagues are usualy cheap, it's the senders that are pricey. Here's a link for the sender:

Go with 80 PSI units. I had a 150 PSI and there is no point in having a gauge that goes that high in a diesel.
