If its a stock engine, then its a "KKK K24" or a "Garrett T3".
Look at the waste gate. If it looks like a metal can, then its a Garrett, if it looks finned and cast, its a KKK.
Or you could just look at the ID. tag between the compressor housing and center housing

Ok, both of my engines are KKK's. What size/type of turbo's fit that I can upgrade to? I'm used to old school Chevy 350's so excuse all the dumb questions....

Well, none really without changing over the manifold or fabbing an adapter. VW used a special trapezoidal flange on the 1.6 diesels. Some people say you can get more boost out of the Garret turbo over the K24.

One of my engines is an ECO and one of them is not. I have no idea about boost. The non-ECO I want to bore .040" over and get a bigger turbo, but now I need details on how to increase the boost pressure or buy a bigger turbo.

EE,
LibbyBapa is really asking, "what does 'bigger' mean to you?"
Diesels are relatively low RPM engines. As a result when discussing turbo's bigger does not always mean better.
I have a k-24. It is in stock form, so the wastegate opens at around 12psi. It starts making significant boost at 2k rpm. I would expect your K-14 to start making boost earlier in the rpm range (which I think would be more desireable with a diesel motor) and still have no trouble getting to where the stock wastegate opens. Installing a boost controller would allow you to make more boost.
I think there are lots of other updates you should make before increasing the boost. I had Myke_W put ARP head studs and the metal head gasket in when he built my new long block this year.

My overall goal is to build a "Show and Go" car. One that has great throttle and topend. The twist is that it will do all this while running on 100% Biodiesel and SVO. I know it wont be the same as with a gas car but I would like it as close as possible. REally I want a Kick a$$ car to promote the use of biodiesel. Most people around here think of slow old worn out farm trucks or black clouded Volvo's when they think of diesels. My idea is to change the locals ways of thinking... What do I need to achieve that?

I would also check the faq for making your 1.6 a faster car. That will help you on the engine to get it to go. Also the vendors section has some dealer for go fast parts. As far as show you could put your engine in a 32 ford coupe
Really though any body shop advice for any car would fit the bill.
