Plenty of room... in the passenger vans particularly; the camper's driver seat is hampered a bit by the sink/stove combo behind it, if you like to recline a lot. I have a camper swivel-seat platform under the passenger seat, so it sits about an inch higher than the driver.
The default driver position is kind of upright... you feel like a bus driver in these things, LOL.

Thanks! ;D I've been busy elsewhere since then... not much has transpired. Got to get down to DMV and waste a day getting the paperwork in order.
I need to look at the brakes again, I'm not happy with the way it's stopping, very weak. Maybe I'm spoiled by the awesome brakes on the Passat, but I don't remember it being this bad before. High effort and low pedal. Gonna bleed 'em again, and maybe hit the front disks w/ a sander, they're a little crusty. Got the vac pump sorted, so it's pulling nicely, the brakes just feel out of whack. The wheel/tire combo I have in it now weigh about 80lbs each, I think that might have something to do with it. :P
There's a thread on Samba about converting the fronts of a Vanagon to a combo of Jaguar disks, and either Jag or Toyota truck 4-puck calipers that's got me plotting.
