It seems there are at least two versions of the Bentley manual for the MkIIIs - one (ISBN 9780837603650) is for "Volkswagen Jetta, Golf, Gti, Cabrio: Service Manual Including Jetta, and Golf, 1993, 1994, 1995, 1996, 1997", the other (ISBN 9780837603667) has a much more specific title, "Volkswagen Jetta, Golf, Gti, Cabrio Service Manual: Including Jetta Iii, Golf Iii, Vr6, and Tdi 1993, 1994, 1995, 1996, 1997, 1998, and Early 1999".
So for my purposes (1996 Golf TD) is there any difference between the two? Any more detail or better pictures in one over the other?

I use 0837603668 and it has everything I need except for Passat wiring diagrams.

Yeah, I figured that. But I'm wondering what the other one is missing (if anything). I've got a line on the other one cheap, and if it covers the AAZ, then it's all good. If not, it's a big pile of paper.

I have ISBN 978-0-8376-1660-5 which covers "Volkswagen Jetta, Golf, GTI 1993 -> 1999, Cabrio 1995-2002"
It definitely covers AAZ engines as well as TDI engines. AAZ isn't mentioned on the cover (TDI is) but the AAZ is included throughout the book and is listed in the table of contents.
Mine's hard cover, which is nice.
