This is where it sits at operating temp.. .. so its not over heating for lack of coolant. I have heard this light has dual purpose.. soo I checked other things.. i thinmk i heard it monitors brake fluid level? its at the full mark too.. and i also checked its connection.. seems good there as well. What do you guys think?? also its intermittent... could happen then not happen then happen again ... its weird.

Common problem from what I have experienced. I believe it's second purpose is to let you know that your coolant level is low. Sometimes that sensor just craps out though

Mine does it every other startup without fail, usually stops with 5-10 minutes, coolant is full and car isn't even warm.
Probably a bad coolant sensor like burn_your_money said.

is the coolant level sensor the one on the side of the head? or is that temp?

On the side of the head itself is one of the oil pressure senders. The coolant temp gauges are on the coolant flanges. The coolant level sensor is in the overlfow bottle. On late mk2s and mk3s it is integeral to the bottle so try a junkyard bottle
