I just bought what i believe to be a MK I 1979 Rabbit Diesel C This is my first rabbit and i am just wondering how low i can lower it and where to get the kit

Are you on vortex? That's probably a much better place to find out how low you can get a rabbit. I'd guess you're looking at coilovers perhaps camber plates but I don't know which would be the lowest.

Stock size tires and coilovers.
As low as you please!

Just mind the oil pan, it is the dangling member of a vw...
Also camber plates will help you better dial in your suspension (camber specifically)
but do not affect ride height.
