How difficult on a scale from 1-5 1 being a weekend project ten being 2 months in a gargage. would toi swap a mk2 gas to diesel?

Depends on a lot of factors, in and running I'd probably say 6 or 7 assuming you don't run into any hick-ups. Neat and orderly with all the gauges, and everything working including cleaning up the engine bay you can easily hit a 10

on the other end of the spectrum my cousin swapped a GTI engine into a diesel rabbit in a weekend.
