Hi Guys this is my first time working with a diesel and I've heard from those of you that time your motors by ear to listen for the "marbles" noise then back off a bit. I'm using a rover 300tdi pump on a AHU  and have no dial gauge on hand, does the motor sound too advanced in this video?

No idea... Cannot view...

My experiances.... 130 too much, needs glow plugs working to light it up at 50f... 118 no need for glowplugs till below freezing...

Ran like crap and noisy at 130 vs 118...

This is on 3 pumps, 2 cars...

So buy a gauge... You cannot do what you think you can... They turning pump body while running for what u attempting... Rover pump has multi piece gear... And you cannot adjust it that way

Better in email... I used stock tdi goofy studs on t belt end, and the one bolt... Custom made bracket for under lines and stock bolt and taper nut...

The pully.... Mine has a custom gear... Had the stock solid one split and added steel plate with slotted holes, much like gasser adj cam gear for boy racers... There is a pic of it somewhere on gtd in tdi section...

Or a mk4 pully and hub.... Has to be thinned out to not hit t belt cover... And short 8mm bolts as stock ones hit rover pump snout!!!

Those who saw my pump gear like it most and machine shop charged me $100... Getting mk4 pully and hub tricky to get both parts

You can do what CRSMP5 suggested, I have a 1Z with the a hybid pump, used a 1.9 housing with 300 rover internals with stock gear pulley.  I had to die grind the slots on the 1.9 housing just a wee bit more.  At fully advanced with this pump I get 1.40" on the dia gauge - so if you want to use the stock pulley I'd move it to fully advanced, (pushed as far as possible towards motor) and start there.  Back it off as you feel necessary.

What number it is at does not matter. How it starts, idles and runs is what matters.

So, how does it start, idle and run? What is the performance like? Try moving it more advanced and try that for a few days. Try it more retarded and try that for a few days. There is no setting for this Engine/Pump combo, it never existed from factory.. We are paving the roads as we drive on them ;)

Your particular setup will need particular settings, you seem to know what you are doing so there is no issue on fiddling. Keep the faith, it sounds perfect to me in your video.
