Ok, I found the answer on VWVortex. It's the black 3 pin sensor on the left side of the radiator. Cheers!

Thats the sensor for the fan control, like a thermoswitch.  The coolant temp sender that displays in the cluster is on the plastic flange at the front of the cyl head.
