There's 3 thicknesses. You need to measure your piston protrusion (how far above the deck they project) and then choose the correct gasket for your engine. Every engine has its own variations, hence the multiple thicknesses.

I was told I should measure the valve protrusion too?

Since this question comes up a lot maybe we should do a FAQ on it.
Bentley says;
Through 1980, piston projection above the head of 0.43- 0.63 mm gets gasket of 1.30 mm A 2 notch part no. 068 103 383
projection of 0.63- 0.82 mm uses 1.40 mm or 3 notch gasket part no. 068 103 383C
projection of 0.82-0.92 mm uses 1.50 mm or 4 notch gasket part no. 068 103 383G
projection of 0.92-1.02 mm uses 1.60 mm or 5 notch gasket part no. 068 103 383H
1981 and later
Projection of 0.67- 0.82 mm uses 1.40 mm or 1 notch gasket PN 068 103 383L
Projection of 0.83- 0.92 mm uses 1.50 mm or 2 notch gasket PN 068 103 383M
Projection of 0.93- 1.02 mm uses 1.60 mm or 3 notch gasket PN 068 103 383N
I think all are available at Parts Place Inc last catalog I looked at. Be aware when just buying a gasket based solely on notch gasket. Depending on the year it would be different thickness. You want the thinnest gasket you can get away with. You are losing power if you go bigger.
I have never heard that one needs to measure valve protrusion to match a head gasket.

I was reading that in my manual. but my biggest issue is my truck wasn't originally a diesel so I have no idea what year engine could be in it.

Does it use 12 mm head bolts or 11 mm. At least that would tell you that it was built mid 1981. Most 1980 vehicles had 1.5 liter engines in them. So if you have a 1.6 then I would just use the after 1981 numbers.

Doesn't really matter all that much year wise - the spec is close enough to the same. You do need the correct gasket for hydraulic vs. mechanical heads though.

I believe the 1.5l had 5 different gaskets to choose from. The list looks accurate, but 84 through maybe 86 had the changeover to 12mm hydro
