stretch or non?
If they are stretchy and didn't snap, probably fine
12 pt strech. I figure I am 1/4 turn over what you would be if they were 6 pt. 15 ft#s past (before the two 1/4 turns) what they were supposed to be.This is officially in EggSuck teritory.
Thought I read a post on here about stretch bolts [ in general ] and the correct torque of them, being close to the point of metal failure.
If it were me, I'd eat the cost and buy / install new bolts for piece of mind.
You can pretty much tell if they fail.
I had a whole bunch fail while tightening,but all the ones which survived installation were fine thereafter. the ones that broke, extract and stuff in a new one, no big deal.
Maybe it would be a concern in an ultra performance motor, but then you probably would not want stretch bolts anyway.
Okay, Odd thought
...If I replace each bolt one at a time, think I could save the head gasket, or will I be risking warping the head?

I wouldn't worry too much about it.
Once the bolts reach yield point, they don't add much more pressure and the extra 1/4 turn shouldn't be close to the fail point.
It's reasonably common for people to swap to head studs one at a time to save the headgasket. You should be fine doing it.
