Oil pressure switch thread is M10x1.0 (double check the thread pitch before you make any decisions based on that info)...
Oil feed to turbo fitting is M12x? (can't remember the thread pitch, other than it's not what I had in my tool box for tap sizes)...

If it were me, I'd use stock 1.6 parts at the filter flange:
Either track down an OEM turbo filter flange with both the oil feed and pressure switch locations already drilled and tapped...
Or use your stocker and drill and tap as necessary. Looking at the photo posted by 81 vw pu, the M12 goes where the AN fitting is sitting (centerline of the oil filter) and the M10 goes on the other undrilled boss closer to the engine block.
From there I'd either use the OEM fitting and hard line, then adapt as needed at the turbo or find an M12 x AN4 fitting (similar to what's in the photo above) and run an AN4 braided line to the turbo with the necessary adapter at the turbo (not sure what fitting is on the turbo).
