Is there any difference if it's a 4 door car?
If the door handle is missing you should still be able to stick your finger in the hole in the door and push down on the lever in there to open the door. As far as breaking into cars, VW MK2s have to be some of the easiest in the world.
Is this a four door mk2 car? Only way I've found is to remove the back seat, and get in there with a screwdriver and pop the latch itself. Try it a few times on a door you can get open for practice, because you're working blind. Once it's open, you may or may not have to replace the door latch. A bunch of lubrication might fix it, or might not. You might find that there's a spring broken inside the latch.

Screwdriver between the door and the body, pop the latch where it grabs the pin.
