From the tach's perspective that should work just fine.

From rest of the car's perspective.... the gasser alternator is usually significantly smaller (ie 65A on an MK2 iirc) vs the beefier diesel version (90A, again iirc) which means it may struggle a bit to charge a cold battery while running the defrost fan, rear window defogger, and headlights.  MC Hammer thumping on the stereo won't help either. :o

If you live in a warm climate where your battery is always in a good state of charge and you don't need your glowplugs much you're probably in ok shape.  In Edmonton there's mornings I'd like 120 Amps... all of them channeled towards the heated seats.  ;)

So its that simple basicly? just find a 2.0 gasser alternator and hook to my and away I go.

Are there any VW diesel models that does NOT use a signal from the alternator's W terminal? Most diesel tachs I've seen (on other makes) use a magnetic coil pickup on a tooth off of the crankshaft or flywheel.
