How do I change my gear oil?

My 93 Jetta is getting a bunch of bad brake line replaced tomorrow and I'm doing an oil change to it tomorrow as well. Esso XD3 0w40 plus a Bosch oil filter. I figure while I've got the front end up in the air it might be a good time to change the transmission oil. How much is needed and what grade? Where is the drain bolt/screw/plug? I've got the CHD transmission if it makes any difference.

I can usually only get about 1.5 liters in, I suspect it has to do with left over oil in the gearbox.
